I bought a 1978 Bronco and would like any suggestions about fluids and gaskets that need to be changed. Any info would be greatly appreciated. Also any recommendations on type of fluids(brands, and also synthetic???) Thanks

Don't change any gaskets unless you see them leaking.

As for other shit:

Oil & filter change
Fuel filter
Tranny fluid and filter(if auto trans)
Diff fluid(front and rear)
Tune up(plugs, cap, rotor, wires)
Pcv valve
Air filter
Check all other fluids
Check brakes
Check drivetrain
Grease everything possible
Flush cooling system(T-stat and gasket, maybe hoses if they where crappy looking in that process)
Check belts
Compression test(great thing to do while changing plugs)

These are just common maintenance things I'd do if I bought a truck of that age and didn't know it's history. I wouldn't use synthetic at this point either.

Grease everything possible
Best one there. Don't get lazy (like me:banghead), with all those u-joints, ball joints and tie rods-- there's alot of metal on metal wear (and breakage) that can be reduced/avoided wirh a simple grease gun.
