I have a 5 speed from an 89 F350 4x4 that had a 460. Will this transmission bolt up to a 7.3 diesel? If not is there an adapter plate I can buy?

FWIW, the diesel uses a narrow ratio transmission. The wide ratio tranny may make the truck tough to drive as you need to rev the engine exessively in each gear between shifts.

Couldn't I offset that with lower gears in the axles?

The problem isn't the final gear ratio, it's the spread between gears. A gas engine has a range of about 4-5000 rpm to play with, the diesel only has about 3000-3500. The ratio between gears in the diesel tranny is tighter to accomodate the lower rpm range of the engine.

5.72, 2.94, 1.61, 1.00, .76

Oil
4.14, 2.37, 1.42, 1.00, .76
