I bought a set of new mains to put in the engine of my 1990, 5.0L but, when I picked the set up all I found in the box was:

Both halves of the rear main and 4 connecting rod bearings.

Looking around at other bearing sets, all the photos show the same but I got 8 cylinders meaning 8 pistons meaning 8 connecting rods. Is it even possible that this is the right set with only four bearings for the connecting rods?

Just don't seem right to me. I have not yet been into the engine so I can't say I have had a look.

you bought main bearings. that means you have 5 bearings. If you wanted connecting rod bearings you would have 8
