Does anyone know if there is supposed to be an indicator on the dash when the overdrive button on the shifter is engaged? The button definitely works, but I currently need to press it when on the highway to see if it's on or off.
Also how does the overdrive work? It seems to default to on unless turned off, is that the expected behavior?

The OD light is on the end of the shift lever where the ON-OFF button is and will only light when the OD is OFF. OD on is the normal condition. No light in the dash. Also there is no CRUISE light in the dash either.

The transmission control switch is a momentary contact switch. When the switch is pressed, a signal is sent to the powertrain control module (PCM) (12A650). The powertrain control module then energizes the transmission control indicator lamp and the coast clutch solenoid, applying the coast clutch to provide engine braking and cancels fourth gear operation. The TCIL indicates overdrive cancel mode activated (lamp on), electronic pressure control circuit shorted or monitored sensor failure (lamp flashing).
A transmission control switch and an indicator labeled OVERDRIVE is located on the end of the gearshaft lever. Press this switch and the word OFF will illuminate on the shift lever knob. With the word OFF illuminated, the transmission will operate in gears one through three. Operating in overdrive OFF gives more engine braking than overdrive and is useful for descending hills.

To return the transmission to the normal overdrive operation, press the transmission control switch again. The switch may be used to select overdrive or overdrive OFF at any time the vehicle is being driven.

If the transmission control indicator light is flashing on and off repeatedly, the transmission system is malfunctioning. The transmission will operate in a failure management mode with harsh engagements, firm shift feel, and abnormal shift schedule.

Remove the four screws from the lower steering column shroud. Remove the lower steering column shroud.

Rotate gearshift lever (7210) clockwise until it bottoms out in first gear.

Rotate gearshift lever counterclockwise three detents (overdrive position).

Hang a three-pound weight on the gearshift lever.

Center pointer in the middle of D if equipped with C6 transmission, or (D) if equipped with E4OD transmission, by rotating the thumbwheel located on right-hand side of steering column actuator housing.

Slide the new switch into position and snap the cap back on. Note: Don’t confuse the above conditions with a steady flashing pattern of the O/D cancel light. So after further inspection, I see the off indicator on the shifter, it just doesn't illuminate. Can this be disassembled to replace an led or something or does the whole shifter handle need to be replaced.

If everything is functioning correctly everytime you start your truck the overdrive will be in the on position unless you push the button after you start the truck to cut it off.

Also it should be fairly easy to tell whether the overdrive is on or off by looking at the tach at highway speeds as to what the engine rpm's are turning. If the OD is turned off the rpm's will of course be reading higher than what you are accustomed to seeing going down the highway when it is on.

I am sure that someone with the knowledge on what it takes to actually fix the light will chime in shortly but if it is involved unless you really just want the light lit when the OD is off I would not worry about it a whole lot.
