Here's something I made a while back (just never pulled the pics off the camera).

There's a guy in Santa Rosalia way down in Baja that makes those things---shows up with his cart on the same street corner every night, but only between 8 and 11. The crowds start amassing 30 minutes before. He offers condiments like chopped Serranos, grilled onions, cilantro, lime, that weird Mexi version of mayo and an even stranger version of sour cream, three types of homemade salsa, radishes and cabbage. But the best part is his homemade hot dog buns...simply fuktastic and they taste like nothing else I've ever had. Muy sabrosa.....

Looks good to me!

Speaking of bacon wrapped.....Ya'll need to try jalapenos filled with creamcheese wrapped in bacon and grilled on the grill....Killer.

Bacon Explosion
A bud down south made this.I need to try and make,hope I dont die.
Well I tried it and it's all that everyone thought it would be!

I did mix it up a little....
1. Don't use italian sausage.... thats for spaghetti, just use regular hot pork sausage
2. I chose to dice up a green pepper and onion to mix in with the sausage, there is something magical that happens when you do that.
3. Instead of wearing out the bacon theme and putting crushed up bacon in the center I chose to use some pulled pork left over from a butt cooked earlier in the week.
4. I used a st. louis rub for bite and sweetness, theres already enough salt in this thing

I did end up moving it over to a cooking grate I use for smoking to get it up and out of the grease.

:rofl: My wife had a steel "cooling rack" in the cupboard over the oven. I discovered that it makes a great broiling rack for steaks and chicken. She says she needs a new cooling rack now. :shrug :toothless

We cooked both the bacon brats and the stuffed jalapenos and nathans hotdogs on the last west coast chapter Lytle creek snow wheeling run. Gulped down with wheat sodas and doritos, I ate better offroading then I do at my house most times :doh0715: :beer
